Salsa Hummus
I made this today and it was so good.
Instead of a dressing, I severed my Salsa Hummus over spring mix, chopped tomatoes, yellow peppers and cucumber. I topped it all with thinly sliced red onions.
Salsa Hummus
1 red bell pepper, washed and chunked
1 small tomato (Roma tomato is best), washed and chunked
2 cloves garlic
1 tsp cilantro or 1/4 cup fresh cilantro
1 slice of red onion
1 lemon, juiced
1 lime, juiced
2 tbsp of tahini
1 tsp cumin
1 tsp chili powder
1/2 tsp cayenne
1 tbsp of chia seeds
2 cans of red kidney beans - drain well and rinse till no more bubbles.
Put red bell pepper, tomato, garlic, cilantro, onion in food processor and pulse.
Scrap down sides.
Add remaining ingredients and process to a smooth texture.
I didn't add salt, so you will need to Add salt to taste.
If too thick, add a little water a drizzle at a time.
Note: the chia seeds will thicken up the mixture as it sets.
We do have leftovers for tomorrow!
