Pumpkin Pie Crust

I must have been out of my mind to try something so different for Thanksgiving.
Since it turned out great - I wanted to share it. I will use this again.

Pumpkin Pie Crust
I made the "crust" in the food processor.

Ingredients:
Put 1/2 cup unsweetened coconut in the food processor and pulse. It should look like the consistancy of the almond meal.
Add 1 cup of almond meal and pulse.
Next I added 2/3 cup of raisins - look for ones that are just made from grapes - you don't need oil or sugar in your raisins or other chemicals in your raisins. Pulse.
I added 1 tsp of vanilla and just a drizzle of water a little bit at a time to make it crumple like. Pulse after each drizzle.
Press into your pie pan. I used a baggie over my hand to press the mixture.
Press it up the sides - you want it a tiny bit higher than the top of your pumpkin mixture but not all the way to the top edge.
I was worried about it sticking to the pan because there was no fat and I didn't "grease" the pan either.
It came out without any problems. I did notice that I had to cook my pumpkin longer. The crust gets dark but tastes great.

Bath Time

Not much fun, but I'm soooo clean.

Salsa Hummus

I made this today and it was so good.
Instead of a dressing, I severed my Salsa Hummus over spring mix, chopped tomatoes, yellow peppers and cucumber. I topped it all with thinly sliced red onions.

Salsa Hummus

1 red bell pepper, washed and chunked
1 small tomato (Roma tomato is best), washed and chunked
2 cloves garlic
1 tsp cilantro or 1/4 cup fresh cilantro
1 slice of red onion
1 lemon, juiced
1 lime, juiced
2 tbsp of tahini
1 tsp cumin
1 tsp chili powder
1/2 tsp cayenne
1 tbsp of chia seeds
2 cans of red kidney beans - drain well and rinse till no more bubbles.

Put red bell pepper, tomato, garlic, cilantro, onion in food processor and pulse.
Scrap down sides.
Add remaining ingredients and process to a smooth texture.
I didn't add salt, so you will need to Add salt to taste.

If too thick, add a little water a drizzle at a time.
Note: the chia seeds will thicken up the mixture as it sets.

We do have leftovers for tomorrow!

Labor Day - An American Holiday

It's Labor Day Weekend, please drive carefully. Oregon was the first state to make Labor Day a holiday in 1887!

Hospital

We went to the hospital yesterday, it was lots of fun. We were on the 3rd, 6th and 5th floors. They had signs with dog paws on the doors for the patients who wanted a visit. We got lots of smiles and I gave lots of licks and tail wagging. I can't wait till next week when I go back again.

Trip Up North

Did I tell you about my trip to Maryland & Va? It was great. I got to meet lots of people and dogs, and I met a CAT! I went to Pet Smart in Chantilly, Va. and stayed at the day camp. I played all day long. I slept great that night. Then I went to Maryland and met Ollie, who I haven't seen in a long time. We played all day long, he's a great playmate. The next day I met Ty, Cloe and Gavin the cat. I never met a cat before. They wore me out. It was lots of fun and I had a great time. I have some pictures somewhere that I'll show you.

Granny Doodle got a big Birthday Surprise in the mail. A hand made quilt by the famous Fran the quilt maker in Pennsylvania. What a beautiful quilt! Thank you Fran, it will keep us warm and toasty all winter.

Hospital Visit

We went to the Johnson City Hospital yesterday, wow was it lots of fun. All the patients and nurses gave me lots of attention. I really enjoyed my visit. I'll be back.

Happy 4th of July

VA Hospital Visit

I had a GREAT time! The people were so nice. I met a man who was in WW Two, wow. I'm looking forward to going back.

Big Day

Tuesday is a big day for me. We are going to the VA Hospital to visit. I hope they like me.
