Sweet Potato Biscuits

 
 

 
Sweet Potato Biscuits

I need to point out that I used my Cuisinart Food Processor to make these. Easy Peasy!
 
Preheat Oven to 450 degrees.
Line a baking sheet with parchment paper.

Ingredients:
2 cups of Whole Wheat Flour
1 Tablespoon plus one teaspoon of Baking Powder
1/2 Teaspoon of Cream of Tartar
6 Tablespoons of Butter (cold from the fridge)
1/2 Teaspoon of Cinnamon (plus more to sprinkle)
1/2 of a cooked cold Sweet Potato (about 3/4 cup) cubed or mashed (great for left over Mashed Sweet Potatoes)
1/2 cup of Raisins
1/2 cup of Pecans
4 Tablespoons of cream
2 Tablespoons of Organic Maple Syrup (or you can use honey or cold Water)

Directions:
I used the chopping blade to my Food Processor to make these "biscuits".
Put Whole Wheat Flour, Baking Powder, Butter and Cinnamon in the Food Processor.
Hint: Put a dish towel over the top of your food processor or there might be a mess.
Pulse a few times till the butter flour mixture looks like course corn meal.
Take off the towel carefully, pull off the part of the top where you add ingredients to the Food Processor without taking off the top entirely.
Add all the remaining ingredients.
Pulse. Watch.....don't pulse too much. This doesn't take very long.
You want to see the mixture pull away from the sides a little and everything mixed.
If you see it's too dry..... add one tablespoon of water thru the feed tube. You want it to look a little dry.
Unplug your machine.
Have a floured surface ready.
Dump the dough on the floured surface - be watchful of the blade.
Carefully remove the blade from the dough.
Knead the dough only a couple of times on the floured surface.

I had fun with this - You could make square, triangular or round biscuits.
LOL this is the first time I made triangular shaped biscuits.
Use a biscuit cutter or a knife.
I hand rolled the dough into a square about 12 inches by 12 inches.
I sprinkled some cinnamon on the square, roll it up into a log.
I rolled to log once. Cut off the ends. Sit aside.
Carefully, cut thru your log. Try to cut them all the same size. About an inch.
You want rounds..... so you may have to reshape them a bit after cutting the log.
You are going to get about 6 big sized biscuits. Put remaining aside.
What's left - knead the left over dough - use a knife and cut them into a big square or triangle.
I ended up with 10 biscuits.
Arrange the biscuits on the baking sheet.
If you want - coat the top of the biscuits with butter. (as you can see, I didn't)
Bake for about 15 minutes.
