NATIONAL PASTA DAY – October 17
October is National Pasta Month, and October 17 recognizes National Pasta Day.
Pasta lovers celebrate!

Want to make some Pasta!
There is nothing like fresh handmade pasta and it's not really so hard.

Directions:
In a medium sized bowl, combine 2 cups of flour and 1/2 teaspoon salt. Actually, some people like to use their counter top. But, if you do, don't let the flour "wall" break.
Make a well in the flour, add 3 slightly beaten eggs, and mix. Mixture should form a stiff dough.
On a lightly floured surface, knead dough for at least 4 minutes (better 8 minutes). You want a smooth, satiny consistency.
Cover the well-kneaded dough tightly with plastic wrap, and allow it to rest for around 45 minutes.
With a pasta machine or by hand roll dough out to desired thinness.

With "fresh" pasta - boil water and cook for about 3 or 4 minutes depending how you like it.
