Really Easy Flat Apple "Pie"
Ingredients:
Filling:
3 large Red Apples - washed, cored - Sliced in the food processor, peels on
1/4 cup of Golden Raisins
1 Tablespoon of Lemon juice
1 Tablespoon of Cinnamon
8 packets of Splenda
Crust:
1 cup Hodson Mill Insta Bake (whole wheat)
2 packets of Splenda
1/4 Teaspoon Sea Salt (optional)
6 Tablespoons of Unsalted Butter (If you use salted butter, omit the sea salt) - cut up
4 Tablespoons of cold water (I used cold water from the refrigerator)
1 Egg - for egg wash
Directions:
Preheat oven at 400 degrees
Line your cookie sheet with parchment paper - I used a metal flat pan with sides.
In the Food Processor, Slice your apples - you could do this with a knife but you want really really thin apple slices. I didn't peel my apples, of course you could if you hate apple peels.
Put your thinly sliced apples in a large bowl and toss with lemon juice, add yellow raisins, cinnamon and Splenda. Set the bowl aside.
Change out the paddle in your food processor. I didn't wash the food processor bowl. I like to keep it simple.
Add one cup of Hodson Mill Insta-Bake, 2 packets of Splenda, cut up your butter and add. Pulse until crumbly.
Add 4 Tablespoons of cold water, pulse. You might need to add a little more water if you see a lot of dry flour.
Put a little bit of Insta-Bake on your surface. Empty the food processor's bowl on that surface.
Kneed a bit, but don't overwork - just bring it together, make a ball. Add a little bit more Insta-Bake and roll out - you can make a rectangular or a large circle.
I chose this time to make a rectangular. In the middle arrange your thinly sliced apples - first make a flat bottom row, then line up the rest on top on an angle - try to squeeze in all those slices.
You are going to end up with 2 rows. One flat and one angled.
I had a lot of the raisins in the bottom of the bowl, so I sprinkled them over the top apple layer. To change it up, you could add some nuts, too.
I flipped up the bottom edges of my rectangle. The sides of the dough, I cut them about one cut every inch.
Get creative here -
I have the bottom and top flipped up over the apples. I took the next two cuts and flipped them over each other, alternate side to side, I continued until the sides where flipped up.
When you are done, make your egg wash - beat the egg with a bit of water, paint your dough.
Put your pan in the oven and bake for about 25 to 30 minutes. It's done when golden brown. Allow to sit for at least 5 minutes.

Flat Apple Pie
Ingredients:
5 Granny Smith Apples, peeled and sliced
1/2 jar of St Dalfours Jam - Plum or Peach (I get it at Ingles, but I have seen it may be at your Krogers if yours has a specialty isle)
6 packets of Splenda
1/2 cup of yellow raisins
1 cup of walnuts or pecans
I tablespoon of lemon juice
1 tablespoon of Cinnamon
2 tablespoons of flour (I used whole wheat flour, but white flour would work, too)
3 tablespoons of butter, cut up in small chunks
1 Pillsbury pie crust (I made my own pie crust using whole wheat flour but it's so very easy if you use a ready made crust)
One egg
Preheat oven to 375 degrees
I used a cookie sheet pan with sides - line with parchment paper or spray center lightly with Pam or other cooking spray
Peel apples and slice them. Put in a large bowl, add Jam, Lemon Juice, Splenda, Raisins, Nuts, Cinnamon, Flour and mix together.
Roll out the pie crust. Place the pie crust in your pan.
In the center of your circle of crust that is in your pan, place all the apple mix. Dot the mix with the 3 tablespoons of butter
Bring the sides up towards the center but not all the way (you will see your apple mixture) being careful not to put a hole in your pie crust.
Make an egg wash - Beat your egg and add a teaspoon of water - brush all over the pie crust.
Bake for about 35 to 40 minutes until the crust is golden brown.
After I baked it, Hubby thought I should dust it with more cinnamon and a couple of Splenda packets.
If you don't like your pie so high, you can use 2 pie crusts and divide up your apple mixture.
To serve, cut it like a pizza and top with some vanilla ice cream.
